Isothiocyanates are a group of compounds derived from the enzymatic hydrolysis of glucosinolates, sulfur-containing compounds found in certain plants. When plant cells are damaged, such as during chewing, glucosinolates are converted into isothiocyanates by the enzyme myrosinase. This reaction is responsible for the pungent aroma and flavor of cruciferous vegetables.
