Unlike humans, dogs metabolize xylitol differently. In dogs, xylitol causes a rapid release of insulin from the pancreas, leading to a sudden drop in blood sugar levels, a condition known as hypoglycemia. This can occur within 30 minutes of ingestion and can be life-threatening if not treated promptly. Symptoms of xylitol toxicity in dogs include vomiting, loss of coordination, seizures, and in severe cases, liver failure.
